Red Amaranth Fried Rice 红苋菜 炒饭 [素]

I personally really like fried rice because it is one of the recycling food for us to settle the left over ingredients in our refrigerator and it is easy to prepared.

This is one of the recipes that had in my cooking book I brought a year ago. I think this recipes is very special because we seldom use red spinach vegetables to be our main ingredient for fried rice.

Most the fried rice ingredient is more to chinese mushroom, pineapple and etc. I'm using colorful capsicum in my recipe to look more attractive and nutrition together with japanese cucumber.

Ingredients

2 Cup Chopped Red Spinach

1 Cup Over Night White Steam Rice

4-5 Tbsp Chopped Capsicum (Red, Green & Yellow)

1 Piece Chinese Mushroom (soaked in water until soften& chopped)

Seasoning

3 Tbsp Sesame Oils

1 Tbsp Soy Sauce

1/4 Seasoning

1/2 Tsp Ginger Powder

Method

1. Heat sesame oils in pan and saute chopped mushroom until fragrant and tender then add in red spinach.

2. Continue stir-fry the spinach until soften then add in white steam rice and stir-fry and mixture the combination. 

3. Add in colorful capsicum and keep stir-fry for 1-2 minutes.

4. Turn off the heat to add in seasoning to prevent burning.

5. Switch on the heat and continue to stir-fry the fried rice until aromatic and it is done.
