Vegan Fettuccine with Toon Leaf Sauce

Toon Leaf is a leafy vegetable that popular in Chinese cuisine and it is very good source of vitamin E, calcium, iron and protein. It is also one of the an anti-cancer vegetable. Today I would like to use this leafy vegetable to made a sauce and stir-fry with Fettuccine noodles. Fettuccine noodles is a pasta family that popular in Roman and Tuscan cuisine. So we will have a Fusion Fettuccine for today tutorial.


Toon Leaves Sauces

Ingredients | 配料

30-40 Toon Leaves [remove vein]

30-40 香椿葉 [去除靜脈] 


10 Grams Sweet Basil Leaf

10 公克 羅勒葉


3 Bundles Chinese Celery with root

3 捆 芹菜


10 Grams Ginger | 10 公克 生薑

100 ml water | 100 毫升 水


Seasoning | 調味料

1/2 tsp salt | 1/2 茶匙 鹽 3/4 tsp seasoning | 3/4 茶匙 調味料 1/2 tsp sugar | 1/2 茶匙 糖


Method | 方法

1.Firstly wash the leaves and soaked in hot water until soften and then add in blender.

 [將葉子洗淨,浸泡在熱水中直至軟化,然後加入攪拌機中]


2. Then add others ingredients and seasoning in the blender and blend it well.

[在攪拌機中加入其他成分和調味料,攪拌均勻]


3. Use medium heat to saute the blended Toon Leaves until the water started to absorbs then switch to low heat.  

[用中火加熱混合的香椿葉,直到水開始吸收,然後切換到低溫]


4. After the water already absorbed, add in canola oils and continue saute for 2-3 minutes.

[水已經吸收後,加入菜籽油,繼續炒2-3分鐘]


5. Now the Toon paste is ready to be used or can be storage in refrigerator for 1-2 weeks. 

[現在可以使用香椿膏,也可以在冰箱中存放1-2週]


Tips | 提示

The Toon sauce will be more tasty to adding mushroom sauce and dark soy sauce in the recipes.

[如果加入蘑菇醬和老抽,香椿醬會更美味]



Fettuccine with Toon Leaf Sauce

Ingredients | 配料

Fettuccine | 意大利寬麵條

6 Pieces cherry tomato | 6 片 櫻桃番茄

1/3 Fresh psychedelic mushrooms  | 1/3 新鮮的迷幻蘑菇

1 tbsp Toon paste | 1 湯匙 香椿葉醬

1/2 tsp red pepper flakes | 1/2 茶匙 紅辣椒片


Method | 方法

1. Boil the fettuccine in salt and oils water.

[在鹽和油水中煮意大利寬麵條]


2. In a new wok adding some canola oils and stir fry cherry tomato and mushroom.

[在一個新的炒鍋中加入一些菜籽油,翻炒櫻桃番茄和蘑菇]


3. Then add in fettuccine and continue stir fry for 2-3 minutes.[然後加入意大利寬麵條,繼續翻炒2-3分鐘]


4. After that add in 1 tbsp Toon leaf paste and continue stir well.

[之後加入1湯匙香椿葉膏,繼續攪拌均勻]
