Assorted Luffa Gourd 翻炒絲瓜

Today I would like to shared one of my favorite dishes for this summer and it is very simple and easy to prepared.
Ridged Skin Luffa or known as Ridged Gourd is one of simple dished in our Chinese Cuisine.
It can be cook in soup or stir-fry in our Chinese recipes and in Indian cuisine they will used it for curry dishes.
The texture of this Luffa is very light and refreshing taste and it is the best times to enjoy in summer season. I'm adding other's ingredients to made it more complete nutrition in my recipes.
Ingredients 1/2 cup luffa gourd 1/3 cup carrot 1/3 cup black fungus 2 pieces fresh frozen bean-curd 3/4 tsp tapioca flour (mix with 50ml water)
1 tbsp sesame oils 150ml water Seasoning
1/2 tsp ginger powder or a few slices of fresh ginger
1/4 seasoning 1 tbsp soy sauce
Method 1. Boil the luffa gourd in salt water for 2-3 minutes and set aside.
2. In another pan, add in sesame oils, water and seasoning. Cover the lid and let it boil for 10minutes in low heat.
3. Then add in black fungus and carrot. Continues boil for 15 minutes.
4. After the carrot turn soften, add in fresh bean-curd and continues cook for 1-2minutes.
5. Add in tapioca batter to thicker the gravy.
6. Add in luffa gourd and continues cook for 1-2 minutes and it is done.
